Chef Peter Humes began his food service career in 1975 managing the Connoisseur Café in Ocean City, NJ. During his 4 year term as manager of the café, Peter was spending more time in the kitchen working with the cooks on creative menu ideas. After a 5 month training in Paris, France, Peter was inspired to open his own restaurant Plymouth Bistro near Philadelphia, Pa. In 1982, he turned the bistro over to his brother, Tim, and he attended The Academy of Culinary Arts with a scholarship from Les Dames d’ Escoffier, New York. Upon successful completion of their 2 year program, Peter was offered a job by James Beard to assist him with recipe testing for his forthcoming book. While in New York, Peter also worked for Smith Barney Harris & Upham and First Boston Corp. as chef for their executive dining rooms. Next was a teaching career at the New York Food & Hotel Management School and the New York Restaurant School. The remaining 3 years in New York, Peter devoted to his own restaurant Aquarelle in Brooklyn. His last 6 months in New York City, Peter was catering chef for Dean & Deluca.
In 1991, Peter moved to Sonoma, Ca. to become Sous Chef Tournant at Sonoma Mission Inn and Spa. Two years later, he became chef/partner with Isa Caterer and Event Maker.
Since leaving Sonoma in 2005, Peter volunteered with humanitarian organizations to help feed needy people here in the U.S. and India. Upon his return to the U.S., Peter settled in San Diego to start his own food service business CalAsia Food with his wife, Tanya.
